ABSTRACT
As “natural fingerprint” of food growing environment, stable isotope abundance has attracted great attention in tracing and adulterating analysis of animal products. In recent years, the number of research papers on tracing animal products by stable isotope ratio analysis has increased. And the combination of stable isotope ratio analysis and other methods has gradually became a promising method for the authenticity and traceability of animal products. Our results summarized the latest progress of stable isotopes technology in animal products, including beef, lamb, poultry, pork, cheese, milk, and seafood, aiming to provide a reference for the application of stable isotope technology in animal products traceability.
