The contents of this book are the proceedings of the American Chemical Society Symposium, “Mycotoxins and Food Safety”, which was held August 21–23, 2000 at the 220th ACS National Meeting in Washington, DC. Researchers from diverse backgrounds in industry, academia, and government presented mycotoxin related topics ranging from occurrence and impact, analysis, reduction through processing and plant breeding, toxicology and safety assessments to regulatory perspectives. Speakers represented a range of international perspectives.

Volume 21/4 is a special issue, dedicated to the nutritional recommendations for the French population. This is the first English condensed version of the French Food Safety Agency's reference nutritional values for the French population, that are used as the reference in many French‐speaking countries to assess the nutritional quality of current dietary intakes among the wider population and specific groups, to determine its adequacy to physiological requirements, or to devise diets or foods to satisfy these requirements.
