A Taste of the Global Economy: New York City Restaurants

Gail Satler Casualization or informalization refers to the loosening of once formalized relations such as employment relations or rules of protocol. The sectors where this is most typically found include information and special services. There are tendencies towards shorter term employment relations in highly competitive and unstable markets. The existence of an informal or casual economy emerges as a mechanism for reducing costs, even in the case of firms and households that do not need it for survival, and for providing flexibility in instances where this is essential or advantageous.
